Rey and I are no different, but on a budget, it can get a little pricey to make those more extravagant dishes, so we tend to stick to simple, cost friendly one dish meals that add a lot of pop to lunch and dinner, without breaking the pocketbook. Here's the first in my new series of home cooked meals called :ONE MEAL WONDERS, for everyone's table. One of the most important things I wanted to keep relevant here is that each ingredient are items that you probably have in your kitchen pantry and refrigerator, so other than a few pennies spent, you'll stay within your budget every week, and still make multiple dishes with the same basic ingredients.

< Enough for 2 adults these are large portions >
1/2 Cucumber ~ Sliced thinly
1/2 Bell Pepper ~ Red, Orange or Yellow ~ Diced
1/2 Iceberg Lettuce ~ Sliced and divided
10 Olives ~ Whole or Sliced it's your choice
Yellow Banana Peppers or Jalapeno Peppers ~ your choice
Gluten Free Tortilla Chips ~ Hand full, eyeball it for your salad size
1 Taco Seasoning ~ I used Taco Bell's Seasoning packet for this one, but you can use whatever you have or what you prefer, hot, medium or mild.
Tabasco ~ I used 3 full Table Spoons for this one, but go according to your taste, than follow packets directions.
1.5 lb. of Grass Feed Beef ~ I've used Turkey, Chicken & Bison for this, all works wonderfully. <You can also choose to go meatless as well, just add beans as a sub out, I've used black beans and they've worked great. >
Directions: Brown your meat of choice, drain excess oil, add taco packet and follow directions, adding Tabasco or Hot Sauce as desired. Slice & dice all veggies, you can also sub out what you have for what's listed, I'd add cilantro, parsley, garlic, onions, whatever makes you happy or what you got. To warm chips place on cookie baking sheet for 10 minutes in a 275 preheated oven.
Assemble your salad by layering a nice spread of warm chips on a dinner plate, add meat or beans spread evenly, but not to over done, layer lettuce, cucumbers, bell peppers, olives and herbs add banana or jalapeno peppers last, and your choice of taco sauce or salsa to finish it off.
Prep time : 20-30 minutes, multi tasking the oven top and baking, as well as veggie prep. Serve with beer, Margaretta, sweet ice tea or lemonade. You can also choose to add sour cream or cheese if you'd like, but we don't it's pretty filling as it is and you really won't miss it.
